<p><b>Sachi Ryu</b> espouses the fundamental values of Kyo-Kaiseki. We
take to heart the spirit of the Kaiseki style, that is, <i>hospitality.</i>
Welcoming and entertaining the customers as personal guests is our consistent
motif. Chef's approach is quintessential minimalist Kaiseki cooking, which
centers on fresh, natural, seasonable material delicately processed,
balanced, and flavored, while refraining from indulgence in superficial
virtuosity and technique.
<p>Sachi Ryu aims to be the cutting edge of the modern Kaiseki that is
authentic and chic at once. A long, thin alley leading from the entrance
to the porch is designed to evoke the atmosphere of the ancient capital,
Kyoto. The tableware is chosen and arranged with utmost care, chopsticks
placed on a piece of live flower.
<p>Upon arrival, we show our guests to the tearoom, where I personally serve up
a cup of green tea. Although many people tend to think of a tea ceremony
as something serious and formal, that is not the case here at Sachi Ryu.
